Ingredients:

- 700ml Wishbone Chicken Bone Broth

- 2 tbsp olive oil

- 2 onions

- 1kg pumpkin – peeled, deseeded and chopped

- 150ml cream or coconut milk

- Garlic and ground cumin (optional)

Implementation:

- Heat the oil and gently cook the onions for 5 minutes until soft (add garlic and cumin if using).

- Add 1kg pumpkin cut into chunks and cook for 8-10 minutes until starts to soften and turn golden.

- Add 700ml Wishbone Chicken Bone Broth, simmer for 10 minutes until pumpkin is soft.

- Add cream or coconut milk, bring up to heat then purée with hand blender until smooth.

- Add salt and pepper to taste.
