Pumpkin soup with Wishbone chicken bone broth

Ingredients:

    • 700ml Wishbone Chicken Bone Broth

    • 2 tbsp olive oil

    • 2 onions

    • 1kg pumpkin – peeled, deseeded and chopped

    • 150ml cream or coconut milk

    • Garlic and ground cumin (optional)

Implementation:

    • Heat the oil and gently cook the onions for 5 minutes until soft (add garlic and cumin if using).

    • Add 1kg pumpkin cut into chunks and cook for 8-10 minutes until starts to soften and turn golden.

    • Add 700ml Wishbone Chicken Bone Broth, simmer for 10 minutes until pumpkin is soft.

    • Add cream or coconut milk, bring up to heat then purée with hand blender until smooth.

    • Add salt and pepper to taste.

    • Serve and enjoy.
